Hyderabadi Masala Mutton


This recipe is a family favorite from the old days.  Not only is it delicious, but it is a quick and easy meal.  It is adapted from The Working Woman's Cookbook by Vimla Patil (1979). 

    Ingredients:

    • 1 tbsp extra virgin olive oil
    • 1/2 kg Mutton (or organic chicken
    • 2 organic onions, sliced
    • 1.5 cups organic yogurt
    • 1/2 tsp tumeric
    • 1.5 tsp ginger and garlic paste
    • 1.5 tsp chilli powder
    • 1 tsp garam masala
    • salt to taste
    • cilantro for garnish (optional)
    • raw sliced almonds for garnish (optional)

    Directions:

    1. Mix yogurt and tumeric in a bowl. Set aside.
    2. Slice onions. Heat oil in pressure cooker.  Add sliced onions and cook until brown. 
    3. Cut meat/ chicken into cubes. Add it to the onion and sauté. 
    4. Add ginger/garlic paste, all spices and yogurt. 
    5. Stir and cook till the oil separates from the yogurt. 
    6. Add salt and water and pressure cook until done. (the water should be just enough to cover all the ingredients in the pressure cooker.  If you are not cooking in a pressure cooker, add only 1/2 cup water and allow chicken to cook, adding more only if necessary).
    7. Garnish with cilantro.
    8. If making this into a curry, set aside the cooked chicken, and puree other ingredients to desired liquid consistency.  Then garnish with cilantro and almonds. 
    Notes: 
    • Use only half the quantity of spices if you have a low spice tolerance.
    • Substitute organic chicken for mutton: not only for health reasons, but also because it will cook quickly even without a pressure cooker.
    • Puree the gravy and onions at the end for a smoother, more curry like finish that can be served with rice (see picture attached).)
